Workweek Vegan on the Weekend: Tofu Scramble

We all like eggs and they may be among the foods most difficult for some people to fathom reducing in order to lead a more vegan lifestyle.  So I myself was skeptical when I first prepared a tofu scramble.  But if you appreciate a savory breakfast every now and again, you may find that (horrors!) you even prefer tofu scramble to scrambled eggs.

For my first time trying it, I used the recipe from Post Punk Kitchen but I found that I prefer to omit the cumin, which I find overpowering here in exchange for 1 tsp onion powder + 1 tsp garlic powder.  I also typically half this recipe when cooking for my husband and myself and the bite or two our toddler eats.

Tofu scramble is one of those kitchen sink dishes- here, I've topped it with sliced onion, spinach, cherry tomato halves and vegan pepper jack (an almond derived "cheese" so as not to overdo it with soy)
