Sun-Dried Mediterranean Spread

Faced this week with left-over bagels & vegan cream cheese from our Easter celebration, I decided to come up with a yummy, savory spread we would enjoy on bagels for lunch.  And voila the sun-dried Mediterranean spread was born. Recipe follows:

Ingredients:
1 container vegan cream cheese softened
1/4 cup petite diced red onion (green onions would also work well)
1/4 cup finely chopped sun-dried tomatoes
2 tbsp finely chopped kalamata olives
1 tbsp capers
1/2 tsp garlic salt
1/4 tsp crushed red pepper
1 tbsp red-wine vinegar or caper brine
salt to taste

Combine all ingredients in a small mixing bowl and serve sandwiched on bagels or multi-grain bread stacked high with spinach or other mixed greens and a shmear of vegan mayo.  You could also serve this as a dip with crudité or crackers for entertaining.

Free-for-All option: This is easy, use traditional cream cheese in place of vegan

  1. This is great, Jenny. My husband bought fat free cream cheese, which I abhor the taste of. So I was thinking of adding things to make it a spread, and I may take this idea. Have you had any experience with raw (not just fruits and veggies), such as making your own crackers or breads on super low heat. One of the things I want to get into. It's kind of a struggle balancing making meals for both us that are really healthy, but I'd like to explore more flavoring techniques.

  2. Hi! Thanks for your comment. If you eat dairy, neufchatel cheese, which is a reduced-fat version of cream cheese is a great alternative to the very bland fat-free cream cheese. But you should try the vegan version sometime too. I have not tried "raw baking" but my friend introduced me to another great blog with some raw recipes, http://mynewroots.blogspot.com/
    so I am going to look there for some ideas on that front. I like you am curious!

  3. I love neufchatel! I actually took some cucumber, garlic, and chives from my garden and made a spread, since it's what I had in my fridge. Not vegan, but not wasteful, at least! I put it on leftover angel hair- delish! So, you inspired me to make something that morning. I'll try the vegan version, and hopefully I can incorporate into his diet,too :)
