Roasted Vegetable Pita Pizzas
A real weeknight special around our house, pita pizzas can be made any way you want it.  Take store-bought whole pita loaves, cover with homemade marinara (a recipe for which you can find here)- and toppings as you like.  Here we chose sliced onions, broccoli florets, cherry tomatoes and two kinds of olives- both green & kalamata.  Drizzle the tops with olive oil and salt & pepper and cook them at 425 on a lined and greased baking sheet on a low rack of the oven until the edges of the pitas are browning.  Here, we used no cheese for our vegan pizzas but a soy or almond-based mozzarella can be added.  

Vegetarian option: Top with slices of whole-milk mozzarella
Free-for-All/ weekend: Add pan-cooked and crumbled hot Italian sausage
